With smashed fresh blackberries, heather syrup (recipe below), smooth Irish Whiskey and just a squeeze of lime to remind us it's still holiday season, this cocktail brings the best of our wild landscapes together to welcome Autumn with a bang.
2oz good quality whiskey, they tell you not to mix the good stuff but that's just not true.
1oz Heather simple syrup, recipe below.
1/2oz or good squeeze of Lime
12-13 freshly picked blackberries.
In a shaker muddle your blackberries (smash to release the juices). Add the syrup, lime and whiskey before adding ice. Shake to fully mix and smash the blackberries further. Strain into a glass over ice. If this is too neat for you try adding 1oz Ginger beer to further water down the whiskey, the earth flavours will mix beautifully with those already in the glass. Enjoy. To make the heather simple syrup
Gather several stems of blooming heather, mix equal parts water and sugar and stir to dissolve. Add a handful of the flowering tips per cup/250ml of water used. Cover and allow the flowers to steep in the sugar at least overnight.

Tips for blackberry picking
Pick berries that are around adult human shoulder hight, higher are for the birds and lower for the animals. Whilst it's great to let kids pick blackberries, be wary of letting them pick and eat any at lower heights as they can often have animal (dog in particular) urine on them, disgusting I know, but also dangerous. Always supervise children when foraging, and if you don't know for sure what it is don't eat it!
