In honour of this month's New Moon on the 16th and it coinciding with the Ides of March (there are ides, the middle few days, in every month but for some reason, other than Shakespeare, March's are to be more feared, at least for me anyway), I've mixed up a pretty soothing Margarita concocted with a syrup brewed with my favourite tea; camomile. Camomile has a well deserved reputation as relaxant and in folklore a circle of salt offers protection, so what could be better for the Ides than this... It's pretty, light and sure to calm the nerves, give it a go and enjoy.
1 1/2-2oz Tequila
1oz Camomile Syrup* (here replacing the triple sec)
1oz or the juice of half a lime
A large pinch of sea salt (I've again used a beautiful rose infused salt I've kept dear for special things for years, but any good quality salt will do)
Combine all the ingredients in a shaker with plenty of ice; shake, strain into a salt rimmed glass (run a slice of lime around the mouth of the glass and roll the juiced edge in a salt covered saucer until it has a nice circle of salt around the rim), serve and relax...
Make a rich syrup by mixing equal parts water and sugar in a saucepan with a few bags of camomile tea (I've used three per cup of water used) and heat until the crack of the boil. Allow the teabags to steep in the syrup until it has cooled, or longer still for a better flavour. Remove the teabags, bottle the syrup and sooth those March ragged nerves!
