In honour of yesterdays New Moon, spring on the breeze and just because it's Friday...
1 1/2- 2oz Tequila
1 oz Lavender Rose Syrup* (here replacing the triple sec)
The juice of half a lime or 1oz if you feel like measuring
A large pinch of sea salt (I use the most beautiful rose infused sea salt)
Combine all the ingredients in a shaker with ice; shake, stain into a salt rimmed glass (put a layer of salt on a saucer or small plate, run a line slice around the rim of your glass and roll it in the salt until it sticks), serve and enjoy your Friday!
*Lavender Rose Syrup
Make a rich syrup in a saucepan with equal parts water and sugar and heat until the crack of the boil. Add rosewater and lavender flowers to taste. (1 teaspoon per 1 cup of water used) I also add pink peppercorns, because all romance needs a little spice... Allow to steep for a few hours to get the lavender flavour truly into the syrup, strain and bottle.
